A TAILORFIT EXPERIENCE: REDEFINING NUTRITION THROUGH A PRIVATE CHEF’S TABLE

“A TailorFit Experience in Seasonal Nutrition & Longevity”

I had the privilege of not only attending but also sponsoring one of the top seminar weekends I’ve been to in years. Coaches from across the U.S. and around the world came together for an intensive on seasonal periodization, training for longevity, and optimizing body composition.

The event was the Assessments, Tools and Protocols seminar created by Robert Jacobs, founder of Outlaw Strength. Rob and myself go back to the beginning of my education journey with Charles Poliquin as roommates during the internship's, seminar's and practical training's together. Since the unfortunate passing of our mentor, Rob has helped continue the teachings and legacy of Charles by diving deep into the cutting edge research for our industry. This particular seminar was a specialization into Seasonal Periodization for Training, Nutrition and Recovery Modalities among other philosophies of body composition and longevity.  

As part of TailorFit’s vision, I want to make sure that we collaborate with the industry's top coaches and specialist throughout the entire world. For this specific experience I didn't just want it limited to the lecture room. That’s why I partnered with my private chef, Derek Finocchiaro to host a TailorFit Three-course lunch—a dining experience designed to bring the seminar’s themes to life, to show how what we eat can teach as much as what we train.

Why the Lunch Mattered

When we set out to plan this, my goal was clear: food should be more than just an afterthought. It should be a curriculum in itself. Each course was designed to reflect seasonality, balance, and longevity—the same concepts we were discussing in the seminar sessions.

I didn’t want the coaches to just hear about nutrient timing, body composition, or seasonal eating. I wanted them to taste it, experience it, and walk away with a new perspective on how food can align with training and lifestyle.


The Courses We Shared

Starter – Spring Awakening Salad
A light, fresh mix of greens, herbs, and a fermented vinaigrette. It was designed to prime digestion, awaken the palate, and showcase how seasonal produce sets the tone for nutrition.

Main – Balanced Strength Plate
A protein-centered entrée with seasonal root vegetables, healthy fats, and smart carbohydrates. This wasn’t about restriction—it was about balance, aligning nutrients with energy demands and recovery needs.

Dessert – Nourishing Finish
A seasonal fruit compote paired with a nut-based crisp. The point was to demonstrate that dessert can nourish as much as it satisfies—when crafted with intention.

Derek executed the vision with precision, and it was powerful to see coaches recognize that food itself can embody the principles of training longevity and body composition.

Lessons from the Seminar

Throughout the weekend, led by Robert Jacobs and others, several themes stood out to me as both a participant and a sponsor of this experience:

Periodization of Nutrition – Matching diet to training cycles and seasons, not just eating on autopilot.

Longevity as the Goal – Every decision we make with food and training today is an investment in health decades from now.

Body Composition with Sustainability – Moving away from extremes and focusing on realistic, long-term changes. It is more about consistency than all-in mindset,

Seasonal Nutrition as Strategy – Leveraging nature’s cycles to support immune health, energy balance, and recovery. This was the highest return on investment for myself. Understandign the power of food selection during seasonal times as well as daily times. It is the understanding of how the body assimilates particular foods as a focus at different times.


My Reflection

For me personally, it was more than just a seminar—it was a moment of alignment. To see TailorFit’s philosophy in action, shared among world-class coaches, and to watch Derek translate these concepts into flavor and form, was incredibly rewarding.

The conversations over the meal were some of the more valuable of the entire weekend. Coaches debated strategies, shared client experiences, and connected over food that embodied what we had been learning in the sessions. During the days of Poliquin education seminars these were known as Parking Lot Sessions.

It reminded me why I started TailorFit: to create experiences that merge knowledge, lifestyle, and longevity into something lasting.

Looking Ahead

This weekend was just the start. I see a future where experiences like this—where food, training, and community come together—become a cornerstone of TailorFit’s ecosystem. We’re already planning ways to expand on this format, from seasonal dining experiences to resource guides coaches can take home to their clients.
